kelly - i'm glad you like the recipe! i wanted to try your cake recipe already anyway! i will send it to the bakery to see if they'd be able to make it :) i don't want to stress myself out with making my own cake so i am just passing along recipes to a bakery in town. thanks for the reminder about the cake recipe!

LOOOVE your granola recipe! Also, one of my readers makes wedding cakes, and made one for a client using my Vanilla Bean Cake recipe (one of my most popular recipes):
http://www.thespunkycoconut.com/2010/02/more-reader-photos.html
You can also make it chocolate. That version is here: http://www.thespunkycoconut.com/2010/01/marble-cake.html
I'm so happy your having fun planning your wedding! I wish I could do mine again! :-)

Love, Kelly

rhonda - flaxseed meal is the same thing as ground flaxseed! these are a little bit chewy. if you like them to be more crisp, just cook them for the entire time. i actually have cut my cooktime down before just so i could have a chewy granola bar :) a great way to keep them crunchy after you bake them is to store them in the freezer!

These look SO delicious! Do they come out crunchy or chewy? Is flaxseed meal the same thing as ground flaxseed?

Hope you find a wedding cake just the way you want it too!
